One of my husband’s favorite treats are Lemon Bars. When we got married I received a bunch of recipes at my bridal shower, including his mom’s Lemon Bar recipe. She made them periodically for us so, I have to admit, I never made them myself until this past year. (I cannot believe this!)
While my husband was gone one night, I decided the kids and I would finally make them as a surprise. I did not, however, check to see if we had all the ingredients before we began. We could have all gone to the store. Instead, we troubleshooted and subbed the missing amounts of eggs and lemon juice that we needed.
We ended up with Berry Lemon Bars, my new personal favorite!
Berry Lemon Bar Recipe
- 9 x 13 pan
- 2 Cups Flour
- 1/2 Cup Powdered Sugar
- 1 Cup butter (2 sticks)
- Pinch of Salt
Soften butter and mix above four ingredients. Press into greased 9 x 13 pan. Bake at 350 degrees for 20 minutes, or 330 degrees if using a glass dish.
- 4 Eggs (or can sub 1/4 Cup Unsweetened Applesauce per 1 Egg)
- 2 Cups Powdered Sugar
- 1/2 Cup Real Lemon Juice*
- 1/2 Cup Berry Juice** (mixed berry blend: raspberry, blueberry, strawberry, sometimes cherry)
- 6 Tablespoons Flour
Combine the above five ingredients well. Pour mixture over the first layer. Put back in the oven for another 20 minutes. Cool then top with sprinkled powdered sugar. Cut and enjoy!
*When we subbed we had about 1/4 Cup Lemon Juice and made up the rest with juice from smashed mixed berries. I’ve made a few times since and prefer to keep the whole amount of lemon and add equal part berry for lots of flavor.
**I use frozen mixed berries, microwave to thaw, smash with a fork, then drain into measuring cup. It is a little tedious but totally worth it for the end result!
Berry Lemon Bars

- 9 x 13 pan
Ingredients
- 2 cups flour
- 0.5 cup powdered sugar
- 1 cup butter unsalted
- 1 pinch salt
- 4 eggs
- 0.5 cup lemon juice fresh
- 0.5 cup berry juice
- 6 tbsp flour
- 2 cups powdered sugar
Instructions
- Soften the butter (1 cup) and mix 2 cups flour, 0.5 cups powdered sugar, and a pinch of salt. Press into greased 9x13 baking pan. Bake at 350 degrees for 20 minutes (330 degrees if you're using a glass dish).
- Combine the 4 eggs, 2 cups powdered sugar, 0.5 cup lemon juice, 0.5 cup berry juice, 6 tablespoons flour, mixing well. Pour mixture over the previously baked bars. Place them back in the over for another 20 minutes.
- Once the bars are cool, cut, sprinkle with powdered sugar, and enjoy!
